Something Seedy Bars with Rachel

This week join our Kitchen Director Rachel in the kitchen. She is teaching you and your campers how to make one of our most popular snack recipes: Seedy Bars! The ingredients are below, so gather your supplies, hit play and follow along for a taste of GRP.

Ingredients

  • 4 cups rolled oats
  • 1 cup coconut sugar or brown sugar (can increase or decrease this by at least ½ a cup based on personal preferences)
  • 2 cups flour (all purpose, gluten free, coconut flour, or flour of preference)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 Tbsp cinnamon
  • 1 Tbsp Salt
  • 1 Tbsp vanilla extract
  • 1 cup honey
  • 1/3 cups coconut oil
  • 1/2 cups sunflower seeds
  • 1/2 cups pumpkin seed kernels
  • 1/4 cup sun butter
  • 1/4 cup flax seeds

Directions

  1. Heat oven to 350
  2. Prep a sheet pan by coating with non-stick spray, butter, or shortening; or lining with parchment paper.
  3. Combine the coconut oil, sun butter, and honey together in a pan on the stove. Heat slowly and blend patiently until you have a homogenous mix.
  4. Combine all remaining ingredients together in a large bowl.
  5. Add the warm, liquid ingredient to the dry ingredients and slowly mix until fully blended.
  6. Bake for 18-22 minutes or until entire pan is golden and edges are starting to turn dark brown.
  7. Let cool entirely.
  8. Cut into bars or crumble, and store in cooler or freezer. Enjoy!
